1 pound ground beef
1 packet (1 ounce) taco seasoning
1 can (16 ounces) refried beans
8 ounces cream cheese, softened
1 cup sour cream
1 can (10 ounces) diced tomatoes and green chiles (like Ro-Tel), drained
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese (for topping)
1/2 cup shredded cheddar cheese (for topping)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the ground beef in a skillet over medium heat until fully browned. Drain off any excess grease.
Stir the taco seasoning into the cooked ground beef and set aside.
In a large bowl, combine the softened cream cheese, sour cream, and the drained diced tomatoes and green chiles. Mix until smooth.
Stir in the 1 cup of Monterey Jack cheese and 1 cup of cheddar cheese into the cream cheese mixture.
Spread the refried beans evenly across the bottom of the prepared baking dish.
Spread the creamy cheese mixture over the layer of refried beans.
Top the cheese layer evenly with the seasoned ground beef mixture.
Sprinkle the remaining 1/2 cup Monterey Jack and 1/2 cup cheddar cheese over the top layer.

Notes
For a Crockpot Trash Dip Recipe, combine all ingredients except the top layer of cheese. Place in a slow cooker on low for 2 hours or high for 1 hour. Top with remaining cheese and cook until melted.
You can assemble this dip completely, cover it, and refrigerate it for up to 24 hours before baking. Add 5 to 10 minutes to the baking time if baking straight from the refrigerator.
