1 tablespoon olive oil
1 pound ground turkey
1 medium onion, chopped
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
1 cup chicken broth
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen corn
1/2 cup chopped fresh cilantro, for garnish
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add the chopped onion to the skillet and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the diced sweet potatoes, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer.
Reduce the heat to medium-low, cover the skillet, and cook for 12 to 15 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
Stir in the frozen corn during the last 3 minutes of cooking.
Remove the skillet from the heat. Taste and adjust seasoning if needed.
Serve immediately, garnished with fresh cilantro.
Notes
For a Southwest Inspired Skillet flavor, add 1/2 teaspoon of chipotle powder with the other spices.
