Make this hearty, one-pan sweet potato skillet dinner using ground turkey and bold Southwest spices. It is a quick, healthy meal perfect for busy weeknights.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen corn
  • 1/2 cup chopped fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add the chopped onion to the skillet and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the diced sweet potatoes, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer.
  4. Reduce the heat to medium-low, cover the skillet, and cook for 12 to 15 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
  5. Stir in the frozen corn during the last 3 minutes of cooking.
  6. Remove the skillet from the heat. Taste and adjust seasoning if needed.
  7. Serve immediately, garnished with fresh cilantro.

  • For a Southwest Inspired Skillet flavor, add 1/2 teaspoon of chipotle powder with the other spices.
  • If you prefer ground beef, substitute it for the ground turkey in this easy sweet potato dinner.
