Naturally Sweetened Sugar Free Banana Bread

Bake this moist, guilt-free banana bread using only the natural sweetness of ripe bananas and applesauce. It is a healthy quick bread perfect for breakfast or a snack.

Ingredients

  • 3 very ripe medium bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/4 cup melted unsalted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whole wheat flour (or almond flour for low carb)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth. Stir in the applesauce, eggs, melted butter or oil, and vanilla extract until combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients. Mix only until just combined. Do not overmix the batter.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely.

Notes

  • For a low carb or keto banana bread option, substitute the whole wheat flour with 2 cups of almond flour and add 1 teaspoon of xanthan gum to the dry ingredients.
  • If your bananas are not very ripe, the bread will lack natural sweetness. Use bananas with many brown spots for the best flavor.
  • This recipe makes a moist sugar free banana bread that is excellent for diabetic friendly diets when using low-carb flour alternatives.
