  • 1 pound white button mushrooms, stems removed
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Italian breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
  2. Wipe the mushroom caps clean with a damp cloth. Gently remove the stems and finely chop the stems. Set the caps aside.
  3. In a medium bowl, combine the softened cream cheese, chopped mushroom stems, Parmesan cheese, Italian breadcrumbs, minced garlic, parsley, salt, and pepper. Mix until all ingredients are fully incorporated.
  4. Spoon the filling evenly into each mushroom cap, mounding it slightly.
  5. Place the filled mushrooms on the prepared baking sheet. Drizzle the tops lightly with olive oil.
  6. Bake for 18 to 20 minutes, or until the filling is golden brown and the mushrooms are tender.
  7. Serve these savory baked appetizers immediately.

Notes

  • For a richer flavor, substitute 2 ounces of the cream cheese with Boursin cheese or soft Brie.
  • If you want to make these ahead, prepare the filling and stuff the mushrooms up to 24 hours in advance. Cover and refrigerate. Add 5 minutes to the baking time if baking directly from the refrigerator.
