Capture the fresh taste of summer with this quick, no-cook strawberry freezer jam. This recipe requires only four simple ingredients and avoids the need for traditional canning, making it perfect for beginners.

  • 4 cups fresh strawberries, hulled and crushed
  • 1 (1.75 oz) package of powdered fruit pectin (like Sure-Jell)
  • 6 cups granulated sugar
  • 1/4 cup water

Instructions

  1. Prepare your containers: Wash and dry several freezer-safe jars or containers. Set them aside.
  2. Crush the strawberries: Place the hulled and crushed strawberries into a large bowl. You want them slightly chunky, not pureed.
  3. Combine pectin and water: In a small saucepan, whisk together the powdered fruit pectin and water. Bring this mixture to a boil over medium-high heat, stirring constantly. Boil for exactly one minute, then remove from heat.
  4. Mix sugar: Stir the granulated sugar into the pectin mixture until it is completely dissolved.
  5. Combine with fruit: Pour the sugar-pectin mixture over the crushed strawberries. Stir gently but thoroughly until all the sugar is dissolved and the mixture is well combined. This takes about 2 to 3 minutes.
  6. Fill containers: Ladle the jam mixture into your prepared freezer-safe jars, leaving about 1/2 inch of headspace at the top of each container.
  7. Cool and freeze: Let the jars sit on the counter at room temperature for about 30 minutes to allow the mixture to set slightly. Wipe the rims clean. Seal the jars and place them in the freezer.
  8. Thaw before serving: When you want to use the jam, move a jar to the refrigerator to thaw for several hours or overnight. It keeps well in the refrigerator for up to three weeks after thawing, or in the freezer for up to one year.

Notes

  • For a lower sugar option, look for ‘No Sugar Needed’ pectin varieties, which often require slightly different liquid measurements.
  • This jam is excellent as a topping for ice cream or yogurt, or as a simple spread on toast.
  • If you prefer a smoother texture, you can pulse the strawberries briefly in a food processor instead of crushing them by hand.
