Make this easy Slow Cooker Garlic Parmesan Chicken for a comforting, rich weeknight dinner. The chicken cooks tenderly in a creamy sauce, perfect for serving over pasta or alongside low-carb vegetables.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (8 ounce) package cream cheese, cubed
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the chicken broth, minced garlic, Italian seasoning, salt, and pepper. Pour this mixture over the chicken.
  3. Place the cubes of cream cheese evenly over the top of the chicken. Do not stir.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks.
  6. Stir the shredded chicken back into the slow cooker. Add the grated Parmesan cheese and stir until the sauce is smooth and creamy, coating all the chicken.
  7. If the sauce is too thick, add a splash more chicken broth until you reach your desired consistency.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For serving over pasta: Cook 12 ounces of your favorite pasta according to package directions. Serve the chicken and sauce over the drained pasta.
  • For a low-carb or keto option: Serve the chicken over steamed broccoli, cauliflower mash, or alongside roasted asparagus instead of pasta or potatoes.
  • To include potatoes: Add 1 pound of small, quartered red potatoes to the slow cooker along with the chicken and broth mixture before cooking.
