Make these easy, bite-sized pecan pie balls without turning on your oven. They capture the classic Southern flavor of pecan pie in a portable, chocolate-dipped treat perfect for holidays or quick snacks.

  • 1 cup finely chopped pecans
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1/2 cup light corn syrup or maple syrup
  • 1/4 cup melted butter, unsalted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for dipping)
  • 1 tablespoon coconut oil (optional, for smoother dipping)

Instructions

  1. Place the finely chopped pecans, graham cracker crumbs, and powdered sugar into a medium bowl. Mix these dry ingredients until they combine well.
  2. In a separate small bowl, whisk together the corn syrup (or maple syrup), melted butter, vanilla extract, and salt.
  3. Pour the wet mixture over the dry ingredients. Use a sturdy spoon or your hands to mix everything until a thick, uniform dough forms.
  4. Roll the dough into small, uniform balls, about 1 inch in diameter. You should get approximately 24 to 30 balls. Place the rolled balls onto a parchment-lined baking sheet.
  5. Chill the balls in the refrigerator for at least 30 minutes to firm them up before dipping.
  6. Prepare the chocolate coating. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
  7. Dip each chilled ball into the melted chocolate, allowing excess chocolate to drip off. Return the coated balls to the parchment-lined sheet.
  8. Refrigerate the chocolate covered pecan pie balls for another 15 to 20 minutes, or until the chocolate coating is set.
  9. Store the finished treats in an airtight container in the refrigerator.

Notes

  • For a gluten free pecan balls option, substitute the graham crackers with gluten free vanilla wafers or almond flour.
  • These are excellent make ahead holiday treats and freeze well for up to three months.
  • If you prefer a richer flavor reminiscent of Pioneer Woman style recipes, add 1/4 teaspoon of ground cinnamon to the dry ingredients.
