Make these simple, no-bake peanut butter balls, similar to Buckeye candy, for an easy holiday treat or party dessert. They require few ingredients and come together quickly.

  • 1 cup creamy peanut butter
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil (optional, for smoother dipping)

Instructions

  1. Combine the peanut butter and softened butter in a large bowl. Mix until smooth.
  2. Gradually add the powdered sugar and vanilla extract to the peanut butter mixture. Mix on low speed until fully combined and a stiff dough forms.
  3. Roll the dough into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  4. Chill the peanut butter balls in the refrigerator for at least 30 minutes, or until firm. This step is key for easy dipping.
  5. Prepare the chocolate coating. In a microwave-safe bowl, combine the chocolate chips and shortening or coconut oil, if using. Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted.
  6. Dip each chilled peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top (like a traditional Buckeye). Use a toothpick or fork to gently lift the ball out of the chocolate.
  7. Return the coated balls to the parchment-lined baking sheet.
  8. Allow the chocolate to set completely at room temperature, or chill briefly to speed up the process. Store in an airtight container.

Notes

  • For a richer flavor, you can use creamy peanut butter that is not the ‘natural’ separation type.
  • If you want a variation, try adding 1/2 cup of crushed graham crackers or Rice Krispies cereal to the peanut butter mixture before rolling.
  • If the dough seems too soft to roll, add a tablespoon or two more of powdered sugar.
