One Pan Shrimp Orzo with Lemon and Basil

Make this simple one pan shrimp orzo for a quick, flavorful weeknight dinner with Mediterranean flavors. Cleanup is easy with this one pot meal.

  • 1 tablespoon olive oil
  • 1 pound raw shrimp, peeled and deveined
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup dry white wine (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Heat the olive oil in a large, deep skillet over medium heat.
  2. Add the shrimp and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 3 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Stir in the orzo pasta and toast for 1 minute.
  6. Pour in the chicken broth and white wine, if using. Bring the mixture to a simmer.
  7. Stir in the salt and pepper. Cover the skillet and cook for 10 to 12 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  8. Reduce the heat to low. Stir in the heavy cream, lemon juice, and Parmesan cheese until combined and creamy.
  9. Return the cooked shrimp to the skillet. Cook for 1 minute to heat through.
  10. Remove the skillet from the heat. Stir in the fresh chopped basil. Serve immediately.

Notes

  • For a brighter flavor, use fresh lemon zest along with the juice.
  • If you do not use wine, substitute with an equal amount of extra chicken broth.
  • This dish is best eaten right after preparation.
