Recreate the iconic, crispy, cheesy Mexican Pizza at home. This easy copycat recipe layers seasoned ground beef, refried beans, and melted cheese between golden tortillas for a satisfying Tex-Mex dinner.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 (16 ounce) can refried beans, warmed
  • 8 small flour tortillas (about 6-inch size)
  • 1 tablespoon vegetable oil
  • 1 1/2 cups shredded Mexican cheese blend
  • 1/2 cup pizza sauce or mild enchilada sauce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Stir in the taco seasoning and water. Simmer for 5 to 7 minutes, or until the liquid reduces. Set the seasoned beef aside.
  3. Heat the vegetable oil in a large skillet over medium heat.
  4. Place one tortilla in the hot oil and cook for 1 to 2 minutes per side until it is golden brown and crispy. Remove and place on a paper towel-lined plate. Repeat with the remaining tortillas.
  5. Preheat your oven to 375 degrees Fahrenheit.
  6. To assemble the first pizza layer, place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
  7. Top the beans with half of the seasoned ground beef.
  8. Sprinkle half of the shredded cheese over the beef layer.
  9. Place the second crispy tortilla on top of the cheese layer.
  10. Spread the pizza or enchilada sauce over the top tortilla.
  11. Top with the remaining refried beans, seasoned beef, and shredded cheese.
  12. Bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  13. Remove from the oven. Top the hot pizza with diced tomatoes, sliced black olives, and chopped green onions.
  14. Slice into wedges and serve immediately.

Notes

  • You can use corn tortillas if you prefer a sturdier base, but flour tortillas crisp up nicely when pan-fried.
  • For extra flavor, add a dash of hot sauce to the refried beans before spreading.
  • If you want a quicker method, you can skip the pan-frying and bake the tortillas plain for 5 minutes until slightly firm before assembling.
