  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 small onion, finely chopped

  • 1 tablespoon Worcestershire sauce
  • 1/4 cup ketchup (for meatloaf mix)
  • 4 cups prepared mashed potatoes (made with butter and milk)
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced (for garnish)
  • 1/4 cup bacon bits (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, salt, pepper, parsley, Worcestershire sauce, and ketchup. Mix gently with your hands until just combined; do not overmix.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish to form the meatloaf base layer.
  4. Spread the prepared mashed potatoes evenly over the meatloaf layer. Smooth the top with a spatula.
  5. Sprinkle the shredded cheddar cheese over the mashed potato layer. Add bacon bits if you are using them.
  6. Bake for 35 to 40 minutes, or until the meat is cooked through and the cheese is melted and bubbly.
  7. Remove the casserole from the oven. Let it rest for 5 minutes before slicing.
  8. Garnish with sliced green onions before serving this ultimate comfort food.
