4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 small yellow onion, minced
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup sun-dried tomatoes packed in oil, drained and chopped
1/2 cup grated Parmesan cheese
2 tablespoons fresh basil, chopped
1 teaspoon Italian seasoning
Salt and black pepper to taste
Instructions
Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the chicken breasts to the hot skillet and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken and set it aside on a plate.
Reduce the heat to medium. Add the minced onion to the same skillet and cook until softened, about 3 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Stir in the heavy cream and chopped sun-dried tomatoes. Bring the sauce to a gentle simmer.
Reduce the heat to low and stir in the grated Parmesan cheese until the sauce is smooth. Taste and adjust salt and pepper if needed.
Return the cooked chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the chicken.
