Prepare tender, flavorful tuna steaks with this quick 30-minute soy and citrus marinade, perfect for grilling or pan-searing.

Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper

Instructions

  1. In a medium bowl, whisk together the soy sauce, lime juice, olive oil, brown sugar, minced garlic, grated ginger, and black pepper until the sugar dissolves.
  2. Place your tuna steaks in a resealable plastic bag or a shallow dish.
  3. Pour the marinade over the tuna steaks, ensuring they are fully coated.
  4. Marinate in the refrigerator for 20 to 30 minutes. Do not marinate longer than 30 minutes, as the acid can begin to cure the fish.
  5. Remove the tuna from the marinade and pat dry with paper towels before cooking. Discard the remaining marinade.

Notes

  • For grilling, preheat your grill to high heat. Sear for 2 to 3 minutes per side for medium-rare (125°F internal temperature).
  • For a cast-iron sear, heat 1 tablespoon of high-heat oil (like avocado oil) in the pan until shimmering before adding the steaks.
  • This marinade works well for ahi tuna steak.
