Make this hearty, layered John Wayne Casserole for a satisfying family dinner. It features seasoned ground beef, creamy layers, vegetables, and a simple biscuit crust.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 cup sour cream
  • 1 cup shredded Cheddar cheese, divided
  • 1 teaspoon taco seasoning
  • 1 cup frozen corn
  • 1 cup frozen green peas
  • 1 (8 ounce) can refrigerated biscuit dough

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the cream of mushroom soup, Ro-Tel, sour cream, half of the Cheddar cheese, and taco seasoning into the beef mixture. Mix well.
  4. Fold in the frozen corn and green peas. Spread this beef mixture evenly into the prepared baking dish.
  5. Arrange the refrigerated biscuit dough pieces over the top of the beef mixture. You can separate them or cut them into smaller pieces to cover the surface.
  6. Bake for 25 to 30 minutes, or until the biscuits are golden brown and cooked through.
  7. Remove the casserole from the oven and sprinkle the remaining half cup of Cheddar cheese over the hot biscuits. Let it sit for 5 minutes for the cheese to melt.
  8. Cut into portions and serve this easy beef casserole hot.

Notes

  • For a richer flavor, use a full pound of taco seasoning mix or add a dash of garlic powder to the beef mixture.
  • If you prefer a different topping, you can substitute the biscuit dough with Tater Tots or cornbread mix.
