Cook a juicy, tender turkey breast quickly in your Instant Pot. This recipe is perfect for weeknight dinners or a stress-free holiday meal, complete with instructions for making gravy from the drippings.

Ingredients

Scale
  • 1 (4-5 lb) bone-in turkey breast
  • 1 tablespoon poultry seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1 cup chicken broth
  • 1 tablespoon cornstarch (for gravy)
  • 1/2 cup cold water (for gravy)

Instructions

  1. Combine poultry seasoning, salt, pepper, thyme, and sage in a small bowl. Rub this seasoning mix evenly over the entire turkey breast.
  2. Pour the chicken broth into the bottom of the Instant Pot liner. Place the trivet inside the pot.
  3. Carefully place the seasoned turkey breast on top of the trivet, skin-side up.
  4. Secure the lid on the Instant Pot and set the vent to sealing.
  5. Cook on High Pressure for 45 minutes (allow 10-15 minutes for pressure to build).
  6. When the cooking time is complete, perform a Natural Pressure Release (NPR) for 15 minutes, then carefully quick release any remaining pressure.
  7. Remove the turkey breast from the pot and let it rest on a cutting board, tented with foil, for 10 minutes before slicing.
  8. To make the gravy, carefully pour the liquid from the Instant Pot into a saucepan, leaving behind any solids. Skim off excess fat from the top.
  9. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  10. Bring the liquid in the saucepan to a simmer over medium heat. Whisk in the cornstarch slurry.
  11. Continue to simmer and whisk until the gravy thickens to your desired consistency. Season with salt and pepper to taste.
  12. Slice the turkey breast and serve immediately with the homemade gravy.

Notes

  • For a crispier skin, you can place the cooked turkey breast under a preheated broiler for 3-5 minutes after resting, watching closely to prevent burning.
  • If you are cooking a boneless turkey breast, reduce the pressure cooking time by about 10 minutes.
  • This recipe works well for a smaller Thanksgiving alternative to a whole bird.
