  • 2 cups cooked, shredded chicken
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: 1/2 cup crumbled blue cheese
  • Optional: 4 slices cooked bacon, crumbled
  • Optional: 1/2 avocado, diced

Instructions

  1. Place the cooked, shredded chicken in a medium bowl.
  2. Add the chopped celery and red onion to the bowl.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, yellow mustard, honey, apple cider vinegar, salt, and pepper until the dressing is smooth.
  4. Pour the honey mustard dressing over the chicken and vegetables.
  5. Mix all ingredients gently until the chicken is evenly coated.
  6. If using, fold in the blue cheese crumbles, bacon, or avocado.
  7. Taste and adjust seasoning if needed.
  8. Serve immediately, or chill for 30 minutes to allow flavors to meld.
