Make this comforting Homemade Reuben Bake for a simple, cheesy casserole that tastes just like the classic deli sandwich. It is perfect for weeknight dinners or feeding a crowd.

  • 1 (14.7 ounce) package refrigerated crescent roll dough
  • 1 pound sliced corned beef, chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 8 ounces Swiss cheese, sliced or shredded
  • 1/2 cup Thousand Island dressing
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Unroll the crescent roll dough and press it into the bottom of the prepared baking dish, sealing the perforations to form a solid crust.
  3. Spread the drained sauerkraut evenly over the crescent roll base.
  4. Layer the chopped corned beef over the sauerkraut.
  5. Drizzle the Thousand Island dressing over the corned beef layer.
  6. Top everything with the Swiss cheese slices or shredded cheese.
  7. Melt the butter and lightly brush it over the edges of the exposed crescent roll dough.
  8. Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
  9. Let the casserole rest for 5 minutes before slicing and serving this warm cheesy bake.

Notes

  • For an extra tangy sauerkraut bake flavor, you can briefly sauté the drained sauerkraut with a teaspoon of caraway seeds before layering.
  • If you prefer a make ahead casserole, assemble all layers except the cheese, cover, and refrigerate for up to 24 hours. Add the cheese before baking and add 10 minutes to the bake time.
  • You can use rye bread cubes instead of crescent rolls for a more traditional rye bread bake recipe, layering the bread pieces with the other ingredients.
