One-Pot Creamy Ground Turkey and Spinach Pasta

You can make this creamy ground turkey pasta quickly in one pot. It is a satisfying, lean comfort food perfect for a busy weeknight dinner.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 8 ounces penne pasta (or other short pasta shape)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the diced tomatoes (with their juice), chicken broth, penne pasta, Italian seasoning, salt, and pepper. Stir everything together.
  4. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  5. Remove the pot from the heat. Stir in the heavy cream and fresh spinach. Continue stirring until the spinach wilts completely into the sauce.
  6. Stir in the grated Parmesan cheese until the sauce is creamy. Taste and adjust salt and pepper as needed before serving immediately.

Notes

  • For a richer flavor, you can substitute half of the heavy cream with cream cheese.
  • This recipe works well for meal prep; leftovers keep well in the refrigerator for up to 3 days.
  • Use whole wheat pasta to increase the fiber content of this easy pasta dinner.
