1 tablespoon vegetable oil
1 pound ground beef (85/15 recommended)
1 medium yellow onion, chopped
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 cup broccoli florets
1 cup sliced carrots
1/2 cup sliced red bell pepper
1/4 cup low-sodium soy sauce
2 tablespoons brown sugar
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
Optional: Red pepper flakes for heat
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground beef to the skillet. Break it up with a spoon and cook until it is fully browned. Drain off any excess grease.
Add the chopped onion to the beef and cook for 3 minutes until it softens.
Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
Add the broccoli florets, carrots, and red bell pepper to the skillet. Stir fry for 4 to 5 minutes until the vegetables are tender-crisp.
In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, and optional red pepper flakes.
Pour the sauce mixture over the beef and vegetables. Bring the mixture to a simmer.
Stir the cornstarch slurry one more time and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
Remove from heat immediately. Serve your ground beef stir fry over cooked rice or spoon into crisp lettuce cups for ground beef lettuce wrap filling.
Notes
For best results when browning ground beef, keep the heat high and avoid overcrowding the pan; this prevents the meat from steaming.
If you prefer a sweeter sauce, increase the brown sugar by one teaspoon.
