Make rich, savory garlic butter rice that is perfectly fluffy. This simple side dish is ready in under 30 minutes and pairs well with chicken, seafood, or vegetables.

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 small yellow onion, finely diced
  • 1.5 cups long grain white rice, rinsed
  • 2.5 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
  2. Add the diced onion and cook until soft, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  4. Add the rinsed rice to the saucepan. Stir and toast the rice for 2 minutes until the edges look slightly translucent.
  5. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to the lowest setting, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  7. Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. This step helps the rice steam and become fluffy.
  8. Remove the lid. Fluff the rice gently with a fork.
  9. Stir in the remaining 2 tablespoons of butter until melted and combined.
  10. Garnish with fresh parsley before serving.
