Make this simple, quick Rocky Road Fudge using only a few ingredients. This no-bake recipe is perfect for fast holiday gifts or satisfying a sweet craving.

  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup chopped walnuts or pecans
  • 1 tablespoon butter (for pan preparation)

Instructions

  1. Lightly grease an 8×8 inch baking pan with butter, or line it with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium, microwave-safe bowl, combine the chocolate chips and sweetened condensed milk.
  3. Microwave in 30-second intervals, stirring well after each interval, until the mixture is completely smooth and melted. This usually takes 1 to 2 minutes total.
  4. Stir in the vanilla extract.
  5. Gently fold in the mini marshmallows and chopped nuts until they are evenly distributed throughout the chocolate mixture.
  6. Pour the fudge mixture into the prepared pan and spread it evenly.
  7. Refrigerate the fudge for at least 2 hours, or until firm enough to cut.
  8. Use the parchment paper overhang to lift the fudge from the pan. Cut the fudge into small squares before serving.
