Bake these simple pizza muffins for a quick, kid-friendly snack, party food, or freezer lunch component.

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni pieces

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Stir in the Parmesan cheese and mozzarella cheese until combined.
  4. In a separate medium bowl, mix the milk, vegetable oil, and egg.
  5. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
  6. Fold in the pizza sauce and mini pepperoni pieces.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute other small pizza toppings like cooked crumbled sausage or chopped black olives.
  • These freeze well. Cool completely, then place in a freezer-safe bag for up to two months. Thaw overnight or reheat from frozen for 30 seconds in the microwave.
