1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup milk
1/4 cup vegetable oil
1 large egg, lightly beaten
1/2 cup pizza sauce
1/2 cup mini pepperoni pieces
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
Stir in the Parmesan cheese and mozzarella cheese until combined.
In a separate medium bowl, mix the milk, vegetable oil, and egg.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
Fold in the pizza sauce and mini pepperoni pieces.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
You can substitute other small pizza toppings like cooked crumbled sausage or chopped black olives.
These freeze well. Cool completely, then place in a freezer-safe bag for up to two months. Thaw overnight or reheat from frozen for 30 seconds in the microwave.
