  • 1 (15 ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  3. Stir in the pumpkin puree, broth, cinnamon, and nutmeg. Bring the mixture to a simmer.
  4. Reduce the heat to low, cover partially, and let it simmer for 10 minutes to allow the flavors to blend.
  5. Remove the pot from the heat. Carefully use an immersion blender to blend the soup until it is completely smooth and silky. Alternatively, transfer the soup in batches to a standard blender (vent the lid and cover with a towel to prevent steam burns) and blend until smooth, then return it to the pot.
  6. Stir in the heavy cream, salt, and pepper. Heat gently until warmed through, but do not boil after adding the cream.
  7. Taste and adjust seasoning if needed. Serve your homemade pumpkin soup hot.

  • For a roasted pumpkin soup flavor without the roasting time, add 1/2 teaspoon of smoked paprika to the onions.
