  • 4 ounces cream cheese, cubed and softened
  • 4 ounces Gouda cheese, shredded
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the minced shallot and cook until softened, about 3 minutes. Add the garlic and cook for 30 seconds more until fragrant.
  2. Whisk in the flour to create a roux. Cook, stirring constantly, for 1 minute.
  3. Slowly pour in the beer while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer and cook until it thickens slightly, about 3 to 5 minutes.
  4. Reduce the heat to low. Add the Dijon mustard and Worcestershire sauce. Stir to combine.
  5. Add the shredded cheddar, Gouda, and cubed cream cheese to the saucepan in small batches, stirring constantly until each addition is fully melted and smooth before adding the next. Do not allow the mixture to boil once the cheese is added.
  6. Stir in the salt, pepper, and cayenne pepper, if using. Taste and adjust seasoning.
  7. Serve the beer cheese dip warm immediately with your favorite dippers.
