4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan cheese, plus more for topping
1 teaspoon dried oregano
1/2 teaspoon garlic powder

2 tablespoons olive oil
24 ounces marinara sauce
8 ounces fresh mozzarella cheese, sliced

Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
If the chicken breasts are thick, place them between two sheets of plastic wrap and pound them to an even 1/2-inch thickness. Season both sides lightly with salt and pepper.
Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, and garlic powder.
Dredge each chicken cutlet first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the cutlet firmly into the breadcrumb mixture to coat both sides completely.
Lightly brush both sides of the breaded chicken with olive oil. Place the cutlets on the prepared baking sheet.
Bake for 15 minutes.
Remove the chicken from the oven. Spoon about 1/4 cup of marinara sauce over each cutlet. Top each with slices of mozzarella cheese and a sprinkle of extra Parmesan cheese.
Return the chicken to the oven and bake for another 5 to 8 minutes, or until the cheese is melted, bubbly, and lightly browned, and the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
Let the chicken rest for 5 minutes before serving. Garnish with fresh basil if you use it. Serve immediately over your favorite pasta.
