Make this simple, elegant Caprese chicken dinner using fresh mozzarella, tomatoes, and basil. This baked chicken recipe is quick and perfect for a weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sliced fresh mozzarella cheese
  • 1 cup cherry or grape tomatoes, halved
  • 4 fresh basil leaves, for topping
  • 2 tablespoons balsamic glaze (for drizzling)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish or line it with parchment paper.
  2. Pat the chicken breasts dry with paper towels. Place them in the prepared baking dish.
  3. Drizzle the chicken with olive oil. Sprinkle evenly with Italian seasoning, salt, and pepper. Rub the seasonings into the chicken.
  4. Bake the chicken for 15 minutes.
  5. Remove the dish from the oven. Top each chicken breast with half of the sliced mozzarella and half of the halved tomatoes.
  6. Return the dish to the oven and bake for another 8 to 10 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the cheese is melted and bubbly.
  7. Remove from the oven. Top each chicken breast with a fresh basil leaf. Drizzle with balsamic glaze before serving.

Notes

  • You can use fresh basil leaves torn or whole for topping.
  • For an extra layer of flavor, you can add a thin layer of pesto under the mozzarella before baking.
  • This recipe works well as a low carb chicken dinner option.
