Easy Cheesy Dorito Casserole

Make this simple Tex-Mex casserole with ground beef or chicken, Rotel, and a creamy sauce, topped with crunchy Doritos.

Ingredients

  • 1 pound ground beef or shredded chicken
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 packet (1 ounce) taco seasoning mix
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9.25 ounces) Nacho Cheese Flavored Tortilla Chips (Doritos)
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. If using ground beef, cook it in a skillet over medium heat until browned. Drain off any excess fat. If using shredded chicken, skip this step.
  3. In a large bowl, combine the cooked meat (or chicken), cream of chicken soup, cream of mushroom soup, sour cream, Rotel, taco seasoning, and milk. Stir until everything is mixed well.
  4. Stir in 1 1/2 cups of the shredded cheddar cheese into the meat mixture.
  5. Spread half of the Doritos into the bottom of the prepared baking dish.
  6. Pour the meat and cheese mixture evenly over the layer of chips.
  7. Crush the remaining Doritos slightly and sprinkle them over the top of the mixture.
  8. Sprinkle the remaining 1/2 cup of cheddar cheese over the top layer of chips.
  9. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted.
  10. Let the casserole cool for 5 minutes before you serve it.

Notes

  • For a freezer meal, assemble the casserole completely, cover tightly with foil, and freeze for up to three months. Thaw overnight in the refrigerator before baking, or add 15 minutes to the covered baking time if baking from frozen.
  • You can substitute cream of celery soup for the cream of mushroom soup if you prefer.
  • Use your favorite flavor of Doritos for a different taste profile.
