  • 4 large ripe tomatoes, chopped
  • 1 small red onion, thinly sliced
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano

  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Prepare the vegetables: Wash and slice the cucumbers. Chop the tomatoes into bite-sized pieces. Thinly slice the red onion. Place all prepared vegetables into a large mixing bowl.
  2. Make the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  3. Combine: Pour the dressing over the vegetables in the large bowl. Gently toss everything together until the vegetables are evenly coated.
