Make this easy crockpot marry me chicken for an effortless, creamy, and flavorful weeknight dinner. This slow cooker chicken recipe uses simple ingredients and delivers a rich Parmesan sauce that tastes like a restaurant meal.

  • 2 lbs boneless, skinless chicken breasts
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 1 tablespoon Italian seasoning
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil, for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, minced garlic, salt, and pepper until smooth.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through.
  5. Remove the chicken breasts and shred them using two forks, or leave them whole. Return the chicken to the sauce and stir to coat.
  6. Serve the creamy crockpot marry me chicken over pasta, rice, or mashed potatoes. Garnish with fresh basil if desired.

Notes

  • For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce during the last 30 minutes of cooking.
  • If you prefer using chicken thighs, they work well in this recipe and stay very moist.
  • This dish is excellent for meal prepping; the leftovers reheat well.
