Make this easy Crockpot French Onion Meatloaf for a tender, juicy comfort food dinner. Slow cooking infuses the ground beef with rich French onion flavor, and topping it with Swiss cheese completes this simple meal.

  • 2 pounds ground beef
  • 1 large yellow onion, finely chopped or grated
  • 1 (10.5 ounce) can condensed French onion soup, undiluted
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, gently combine the ground beef, chopped onion, French onion soup, breadcrumbs, egg, Worcestershire sauce, thyme, salt, and pepper. Do not overmix.
  2. Shape the mixture into a loaf shape and place it carefully into the basin of your slow cooker.
  3. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 3 to 3.5 hours.
  4. About 15 minutes before the cooking time ends, place the Swiss cheese slices evenly over the top of the meatloaf.
  5. Cover and cook until the cheese is fully melted and gooey.
  6. Carefully remove the meatloaf from the slow cooker. Let it rest for 10 minutes before slicing and serving.

Notes

  • For extra flavor, you can use one packet of Lipton Onion Soup Mix along with the French onion soup.
  • Serve this moist slow cooker meatloaf with mashed potatoes or roasted vegetables for a complete meal.
  • If your slow cooker is small, you may need to shape the meatloaf into a tighter oval or use a smaller model.
