  • 2 pounds ground beef
  • 1 large onion, chopped
  • 4 cups beef broth
  • 2 large potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried mustard powder
  • 1/4 cup all-purpose flour
  • 1 (10.5 ounce) can condensed cream of celery soup (or cream of mushroom)
  • 1 (10 ounce) can condensed cheddar cheese soup
  • 1 cup milk
  • 8 ounces sharp cheddar cheese, shredded
  • Toppings: Diced pickles, chopped raw onion, mustard

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. Transfer the browned ground beef and the chopped onion to your slow cooker.
  3. Add the beef broth, diced potatoes, salt, pepper, garlic powder, and mustard powder to the slow cooker. Stir to combine.
  4. Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the potatoes are tender.
  5. In a small bowl, whisk together the flour and milk until smooth.
  6. Pour the flour mixture, the cream of celery soup, and the cheddar cheese soup into the slow cooker. Stir well.
  7. Continue cooking on low for another 30 minutes, stirring occasionally, until the soup thickens slightly.
  8. Reduce the slow cooker setting to the ‘Keep Warm’ setting. Stir in the shredded cheddar cheese until it melts completely and the soup is creamy. Do not let it boil after adding the cheese.
  9. Serve hot with your preferred toppings like diced pickles, chopped onion, and a drizzle of mustard for the full cheeseburger flavor.
