  • 2 cups cooked and mashed sweet potatoes (about 3 medium potatoes)
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs, lightly beaten
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F. Place your unbaked pie crust into a 9-inch pie plate.
  2. In a large bowl, combine the mashed sweet potatoes, sweetened condensed milk, eggs, granulated sugar, and brown sugar. Mix until smooth.
  3. Add the cinnamon, nutmeg, ginger, salt, melted butter, and vanilla extract to the sweet potato mixture. Beat with an electric mixer on medium speed until the filling is completely smooth and creamy. Scrape down the sides of the bowl as needed.
  4. Pour the filling into the prepared pie crust.
  5. Bake for 50 to 60 minutes, or until a knife inserted near the center comes out clean. The center should be mostly set, though it may still have a slight jiggle.
  6. Cool the pie completely on a wire rack for at least 2 hours before slicing.
  7. Serve plain or topped with fresh whipped cream.
