Bake this easy, one-bowl cottage cheese banana bread for an ultra-moist texture and a significant protein boost. It is a wholesome twist on the classic, perfect for a healthy breakfast or satisfying snack.

  • 3 large very ripe bananas, mashed
  • 1 cup (227g) full-fat cottage cheese, blended smooth
  • 2 large eggs
  • 1/4 cup melted coconut oil or unsalted butter
  • 1/2 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or substitute with oat flour for a heartier loaf)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. If your cottage cheese is lumpy, blend it in a food processor or blender until completely smooth. This step is key for the moist texture.
  3. In a large bowl, combine the mashed bananas, blended cottage cheese, eggs, melted oil or butter, maple syrup, and vanilla extract. Whisk until the mixture is uniform.
  4. In a separate, smaller bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are acceptable.
  6. Fold in the chopped nuts, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  9. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.

Notes

  • For an extra protein punch, you can substitute 1/4 cup of the flour with your favorite unflavored or vanilla protein powder. Adjust liquid slightly if the batter seems too thick.
  • Using very ripe, spotty bananas provides the best natural sweetness and moisture.
