1/2 cup whole Cinnamon Toast Crunch cereal, roughly chopped
1 cup powdered sugar (for glaze)
2 tablespoons milk or cream (for glaze)
1 teaspoon ground cinnamon (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Stir in the finely crushed cereal and the roughly chopped cereal pieces by hand.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 9 to 11 minutes, or until the edges are set and lightly golden. The centers should look slightly soft.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Prepare the glaze: Whisk together the powdered sugar, milk, and ground cinnamon in a small bowl until smooth. Add more milk if the glaze is too thick, or more powdered sugar if it is too thin.
Once cookies are completely cool, drizzle or dip the tops into the cinnamon glaze. Let the glaze set before serving.
Notes
For the best flavor, crush the cereal finely for the dough base, but leave some larger pieces for texture.
If you want a stronger cinnamon flavor in the dough itself, add 1/2 teaspoon of ground cinnamon to the dry ingredients.
These cookies store well in an airtight container at room temperature for up to 4 days.
