  • 1/2 cup granulated sugar, plus 1/2 cup for topping
  • 2 teaspoons baking powder

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon, plus 1 tablespoon for topping
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup packed light brown sugar, for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.
  3. In a separate medium bowl, whisk together the melted butter, milk, eggs, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. In a small bowl, mix the remaining 1/2 cup granulated sugar, 1/4 cup brown sugar, and 1 tablespoon of cinnamon for the topping.
  7. Sprinkle a generous amount of the cinnamon sugar topping over the top of each muffin batter-filled cup.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

  • For an extra custardy interior, you can soak 1 cup of stale bread cubes in the wet mixture for 5 minutes before combining with the dry ingredients.
