Easy No-Yeast Cinnamon Roll Bites

Make soft, gooey cinnamon roll bites quickly using simple ingredients. These are perfect for breakfast, brunch, or a sweet snack when you need big flavor without the wait.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup cold milk
  • 1/2 cup (1 stick) unsalted butter, melted (for soaking)
  • 1 cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup heavy cream (for soaking)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk or water (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Prepare the dough: In a large bowl, whisk together the flour, baking powder, salt, and 1/4 cup granulated sugar. Cut in the cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Add the milk gradually, mixing until a soft dough forms. Do not overmix.
  3. Turn the dough onto a lightly floured surface and gently knead 3 or 4 times. Pat or roll the dough into a rough rectangle about 1/2 inch thick.
  4. Prepare the filling: In a small bowl, mix the brown sugar and 2 tablespoons of cinnamon.
  5. Brush the surface of the dough lightly with a little melted butter. Sprinkle the cinnamon sugar mixture evenly over the dough.
  6. Roll the dough tightly into a log along the long edge. Slice the log into 1-inch thick rounds. You should have about 12 to 16 bites.
  7. Prepare the baking dish: Pour the 1/2 cup of melted butter into the bottom of a 9×9 inch baking pan. Sprinkle half of the remaining cinnamon sugar mixture over the butter.
  8. Arrange the dough rounds cut-side up in the prepared pan. Pour the heavy cream evenly over the bites. Sprinkle the remaining cinnamon sugar mixture on top.
  9. Bake at 375 degrees Fahrenheit for 18 to 22 minutes, or until the tops are golden brown and the center is cooked through.
  10. While the bites bake, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons of milk or water, and vanilla extract until smooth. Add more liquid if needed to reach a drizzling consistency.
  11. Remove the pan from the oven. Let the bites cool in the pan for 5 minutes before drizzling the glaze over the warm cinnamon roll bites. Serve warm.

Notes

  • For a shortcut, you can substitute 1 can of refrigerated biscuit dough for the homemade dough. Cut the biscuits into quarters before rolling them in the cinnamon sugar mixture.
  • If you prefer a thicker glaze, reduce the liquid added to the powdered sugar.
  • These bites are best eaten the day they are made for maximum softness.
