  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup Christmas sprinkles (red, green, and white mix)
  • Extra sprinkles for rolling

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until just combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
  5. Gently fold in the 1/2 cup of Christmas sprinkles into the dough.
  6. Place the dough on a sheet of plastic wrap, flatten into a disk, and chill in the refrigerator for 30 minutes.
  7. Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
  8. Place the remaining extra sprinkles on a shallow plate.
  9. Scoop the dough into balls, about 1.5 tablespoons each. Roll each ball lightly in the extra sprinkles until coated.
  10. Place the sprinkled dough balls 2 inches apart on the prepared baking sheets.
  11. Bake for 9 to 11 minutes, or until the edges are lightly golden. These cookies stay soft when slightly underbaked.
  12. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
