Prepare this hearty sausage, egg, and cheese casserole the night before for an easy, stress-free Christmas morning brunch.

  • 1 pound breakfast sausage, cooked and drained
  • 1 (32 ounce) package frozen hash brown potatoes, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon dry mustard powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the cooked and drained sausage evenly over the bottom of the prepared dish.
  3. Layer the thawed hash browns over the sausage.
  4. Sprinkle the cheddar cheese and Monterey Jack cheese over the hash browns.
  5. In a large bowl, whisk together the eggs, milk, dry mustard powder, salt, and pepper until fully combined.
  6. Pour the egg mixture evenly over the layers in the baking dish.
  7. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  8. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
  9. Bake uncovered for 45 to 55 minutes, or until the casserole is puffed and a knife inserted near the center comes out clean.
  10. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • For a slow cooker option, assemble the casserole in a lightly greased 6-quart slow cooker. Cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  • You can substitute ham for the sausage if you prefer.
  • If you need to bake immediately, let the assembled casserole sit at room temperature for 30 minutes before placing it in the preheated oven, then increase baking time slightly.
