- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter, plus more for the griddle
- 1 cup semi-sweet chocolate chips
- In a large bowl, sift together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
- Gently fold in the chocolate chips.
- Heat a lightly oiled griddle or large skillet over medium-high heat. You know the griddle is ready when a drop of water sizzles immediately.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip and cook the second side until done.
- Serve immediately with your favorite toppings.
Notes
- For extra fluffy pancakes, let the batter rest for 5 minutes before cooking.
- If you prefer, substitute buttermilk for regular milk for a slight tang.
- Keep cooked pancakes warm in a 200 degree F oven on a wire rack while you finish the batch.
