8 large eggs, separated into yolks and whites
8 ounces full-fat cream cheese, softened
1/4 teaspoon cream of tartar
Instructions
Preheat your oven to 300°F (150°C). Line a small loaf pan (about 8×4 inches) with parchment paper, allowing some overhang for easy removal.
In a medium bowl, combine the 8 egg yolks and the softened cream cheese. Beat them together until the mixture is completely smooth and uniform. You can use an electric mixer or whisk vigorously.
In a separate, clean, dry bowl, beat the 8 egg whites with the cream of tartar until stiff peaks form. The whites should hold their shape when you lift the whisk.
Gently fold about one-third of the stiff egg whites into the yolk and cream cheese mixture to lighten it.
Carefully fold in the remaining egg whites in two additions, working gently to keep as much air in the mixture as possible. Stop folding just when no white streaks remain.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 35 to 45 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before using the parchment overhang to lift it out onto a wire rack to cool completely before slicing.

For the best texture, ensure your cream cheese is fully softened to room temperature before mixing with the yolks.
This bread is best eaten the day it is made. Store leftovers tightly wrapped at room temperature for up to two days.
