1 box (15.25 oz) yellow cake mix
2 large eggs
1/2 cup vegetable oil
1 cup mix-ins (e.g., chocolate chips, M&Ms, peanut butter chips)
Instructions
Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking pan or line it with parchment paper.
In a large bowl, combine the entire box of cake mix, the two eggs, and the vegetable oil. Mix with a spoon or electric mixer until just combined into a thick dough. Do not overmix.
Fold in your chosen mix-ins, such as chocolate chips or chopped nuts.
Press the dough evenly into the prepared baking pan.
Bake for 18 to 22 minutes, or until the edges are lightly golden brown and a toothpick inserted near the center comes out with moist crumbs attached.
Let the bars cool completely in the pan before cutting them into squares.
Notes
For a richer flavor, substitute the vegetable oil with melted butter.
To make peanut butter swirl bars, reserve 1/2 cup of the dough, mix 1/4 cup creamy peanut butter into the remaining dough, then swirl the reserved dough on top before baking.
For a fudgier texture, use Devil’s Food cake mix and substitute the oil with melted butter.
If you want a slightly crispier edge, bake the bars for 2-3 minutes longer.
