Instructions
Preheat your oven to 375 degrees Fahrenheit. Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt. Set this aside.
In a large bowl, use an electric mixer to beat the softened butter and 1 1/2 cups of granulated sugar together until the mixture is light and fluffy, about 3 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
In a small, shallow bowl, mix the remaining granulated sugar and the 3 tablespoons of cinnamon for the coating.
Scoop the dough into balls, about 1.5 tablespoons each. Roll each ball first in the cinnamon-sugar mixture until fully coated.
Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them.
