  • 1 (8 ounce) block of feta cheese
  • 1 pint cherry or grape tomatoes
  • 1/4 cup olive oil, plus extra for drizzling
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 12 ounces pasta (such as penne or rigatoni)
  • 1/4 cup reserved pasta water
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the block of feta cheese in the center of a 9×13 inch baking dish. Arrange the cherry tomatoes around the feta.
  3. Drizzle the tomatoes and feta generously with the 1/4 cup of olive oil.
  4. Sprinkle the minced garlic, dried oregano, and red pepper flakes over the tomatoes and feta. Season lightly with salt and pepper.
  5. Bake for 30 to 35 minutes, or until the tomatoes have burst and the feta is soft and lightly browned.
  6. While the cheese bakes, cook your pasta according to package directions until al dente. Reserve about 1/2 cup of the starchy pasta water before draining.
  7. Remove the baking dish from the oven. Mash the baked feta and tomatoes together with a fork, mixing them with the roasted garlic and oil to create a creamy sauce.
  8. Add the drained pasta to the baking dish. Toss everything together until the pasta is coated in the sauce. Add a few tablespoons of the reserved pasta water if the sauce seems too thick.
  9. Serve immediately, garnished with fresh basil leaves and an extra drizzle of olive oil.

Notes

  • Use block feta, not pre-crumbled, for the best melting texture.
  • For a richer flavor, add a few sprigs of fresh rosemary or thyme to the pan before baking.
