  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
  • 1/2 cup milk
  • 1 large egg, lightly beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Prepare the apple filling: In a large bowl, combine the sliced apples, granulated sugar, brown sugar, 1 tablespoon flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples evenly.
  2. Pour the water into the bottom of a 9-inch deep-dish pie plate or an 8×8 inch baking dish. Spread the seasoned apples evenly over the water.
  3. Prepare the buttery topping: In a separate medium bowl, whisk together the 1 1/2 cups flour, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  5. Stir in the milk until just combined; do not overmix. The dough will be shaggy.
  6. Drop spoonfuls of the biscuit topping over the apple filling, leaving small gaps between the mounds so the apples bubble up. You do not need to cover the entire surface.
  7. Brush the tops of the biscuit mounds lightly with the beaten egg and sprinkle with coarse sugar.
  8. Bake the cobbler in a preheated oven at 375 degrees Fahrenheit for 40 to 45 minutes, or until the topping is golden brown and the apple filling is thick and bubbling.
