Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts or tenders, cut into 1-inch pieces
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1 large egg, beaten
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons Sriracha (adjust to your spice preference)
1 tablespoon honey or maple syrup
1 teaspoon rice vinegar
Cooking spray
Instructions
In a medium bowl, combine the flour, cornstarch, salt, and pepper for the coating.
Dip each piece of chicken into the beaten egg, letting excess drip off.
Dredge the chicken pieces thoroughly in the flour mixture, pressing lightly to adhere.
Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray.
Arrange the coated chicken in a single layer in the air fryer basket, working in batches if necessary. Spray the tops lightly with cooking spray.
Air fry for 10-12 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature reaches 165°F or 74°C).
While the chicken cooks, prepare the sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar until smooth. This is your creamy spicy chicken sauce.
Place the hot, crispy chicken bites into a large bowl. Pour the bang bang sauce over the chicken and toss gently until every piece is coated.
Serve immediately as an appetizer or over rice or vegetables for an easy weeknight chicken dinner.
Notes
For extra crispy chicken, you can lightly spray the coated chicken again before the first air fry cycle.
If you prefer a gluten free bang bang chicken, substitute the flour coating with a gluten-free flour blend or almond flour.
To make a Bang Bang Chicken Bowl, serve these bites over cooked brown rice with steamed broccoli and shredded carrots.
